It's Lauren from Hint of Greens back again. It has been 2 weeks since my Cleanse ended and I am still feeling great. Energy is up and I have been feeling refreshed and rejuvenated. Prior to the cleanse I was definitely enjoying a few too many summer cheat meals so it was important to me that once I kicked the sugar and cravings from my system not to add them back in. I made it my mission to get back to cooking 90% of my meals and I wanted to share one of my favorite side dishes with you. Mashed potatoes are great and all, but they are not the healthiest choice. So, when I was putting together a dinner party I had to come up with an alternative option that would give me the same texture, enter Celeriac, also known as Celery Root.
Now a little about Celery Root: Celery is rich in vitamins A, C, K and E, essential oils, carotene, microelements and other nutrients. Health benefits of celery root are numerous and in order to enjoy them, one needs to simply add this vegetable to the daily diet. Celery root has excellent calming, analgesic, antiseptic, anti allergic and other therapeutic properties. It is great for people suffering from various problems with digestive system, including ulcers, gastritis, indigestion, a lack of appetite and so on. Health benefits of celery root also embrace the powers of this natural remedy to improve the function of our liver and bladder, calm down arthritis pains and get rid of swellings, improve our vision and stimulate metabolism. I don’t know about you, but this is definitely a vegetable I want in my diet. The best part is, it’s not only healthy but it has the most amazing flavor!
Mashed Celery Root
- 2lb celery root, peeled and chopped
- 2 T EVOO (you can also use ghee, or unflavored coconut oil)
- salt and pepper to taste
Place peeled and chopped celery root into a pot and cover with water. Place over medium-high heat and bring water to a boil. Let celery root cook for 20 minutes or until softened (I check by seeing if I can slicethough a piece with a knife). Drain the celery root and place back into the pot and add oiland season with salt and pepper. Begin to mash the celery root with a forkuntil you get the desired texture.
Serve this with a piece of fish and green vegetable fordinner and you are sure in for a treat!
